Honey Green Tea Prawns
Ingredients:
For the Marinade:
1 Tbsp. cornstarch
2 tsps. soy sauce
1 lb. medium raw shrimp, shelled and deveined
1/4 cup chicken broth
2 Tbsps. oyster sauce
1-1/2 Tbsps. honey
1/2 tsp. sesame oil
1 Tbsp. vegetable oil
3 cloves garlic, minced
2 tsps. ground tea leaves (from tea bags)
1/3 cup macadamia nuts (optional)
Cooking:
1. Combine sauce ingredients in a small bowl; stir until honey dissolves.
2. Place a stir-fry pan over high heat until hot. Add oil, swirling to coat sides. Add garlic and cook, stirring, until fragrant, about 10 seconds. Add shrimp; stir-fry until they turn pink, 1 1/2 to 2 minutes. Sprinkle green tea powder over shrimp and stir to coat. Stir sauce once, add to pan, and bring to a boil. Reduce heat and cook, stirring, until sauce thickens, 1 to 2 minutes. Add nuts and serve.

mimi's cafe carrot raisin bread
Ingredients:
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 2 teaspoons baking powder
* 2 teaspoons cinnamon
* 1/2 teaspoon salt
* 1 cup vegetable oil
* 1 1/2 cups brown sugar, firmly packed
* 3 eggs
* 1/2 cup chopped walnuts
* 1/2 cup canned crushed pineapple in juice, drained
* 1/2 cup raisins
* 1 cup finely shredded carrot
Directions:
1. Sift first five ingredients into a mixing bowl.
2. In a separate bowl, whisk together the oil, sugar and eggs.
3. Stir the liquid mixture into the flour; mix well.
4. Add the next four ingredients; stir again.
5. Grease and flour a 9-inch square pan or four mini-loaf pans. (Fill the pans 2/3 full with batter).
6. Bake at 350* for about 40 minutes. (Mini loaves take about 30 minutes.).
7. Yield: one 9-inch square, or four 3" x 6" mini-loaves.

Mango Smoothie
This is smoothie is so yummy and easy, it's like a blast of sunshine!
Ingredients:
* 1 mango - peeled, seeded, and cut into chunks (i used frozen mango chucks)
* 1 banana, peeled and chopped
* 1 cup orange juice
* 1 cup vanilla nonfat yogurt
Directions
Place mango, banana, orange juice, and yogurt in a blender. Blend until smooth. Serve in clear glasses, and drink with a bendy straw!
Note: This yields 4 servings, I usually make half the amount.
